A couple of weeks ago I made this big fancy dinner which included some homemade mashed potatoes. Conveniently, our local grocery store was having a sale on bags of potatoes, 5 lbs for $2!
Well, that was fine and dandy but it left me with about 4 ½ lbs. of potatoes to try and figure out something to do with. So, finally yesterday I decided what I was going to do with them…attempt to make grandma’s famous pierogis. Oh yeah. Now let me just be clear, Grandma makes these things like a straight BOSS, but I have never, ever in my life attempted to make these works of art by myself. I have before helped make pierogis with my family members, but doing all the work by myself…yeah no. so I did the first logical thing, I called grandma.
After she was done laughing she provided me with the secret recipe. (Sorry I cannot reveal that information to you) I then headed to the store, grabbed a few things I needed, including a nice wooden rolling pin I can now use to defend myself if needed, and once back at home began peeling 4 ½ lbs. of potatoes like an old Ukrainian woman. I then washed them, cut those suckers up, and began my boiling.
While they were getting all hot and bothered in the pot, I started on my dough-making skills. I got my eggs, flour (which I became covered in) my other ingredients I can’t remember, and let that stuff settle in a bowl. Then came time for the mashing and rolling which excuse me but Jesus Christ took some serious upper body strength. I was honestly breaking a sweat doing this but after cutting my little circles and getting my potato filling all nice and ready I filled those pierogis like Rain Man.
In the end, I made about 50 pierogis, filling three bags full with only about 6 pierogis that simply just didn’t make it and I think grandma’s recipe was designed to feed the whole village. However, after finishing four hours later making these things, I ended up having much more respect for my grandmother for manufacturing these things once every month and putting so much love into doing it.
