Exciting news for Queen City, the first meal prep restaurant has just opened in NoDa and it’s called The Green Bunny! I got to meet with the owner and executive chef of The Green Bunny Ashleigh Easterling to get all the dishes on what the company is all about and let me start by saying, it’s delicious! 

I met Ashleigh at her restaurant located at 510 E 15th Street, Suite A in Charlotte and she told me a little background on how The Green Bunny was born and everything in between.

As a graduate of Johnson & Wales University with a Bachelor’s in Restaurant Management, Ashleigh found herself falling in love with the fitness industry and helping her friends ‘meal prep’ based on their customized diets. After her friends started sharing their delicious meals on social media, the business plan began! Ashleigh then started thinking about opening her own ‘meal prep restaurant’ and now a year and three months old, The Green Bunny is a healthy meal prep service that caters to the fitness and dietary needs of a client.

What is The Green Bunny?

The Green Bunny provides you with weekly fresh meal prep already cooked for you and is very flexible when it comes to orders and always strives to meet the client’s needs. As a Charlotte native, Chef Ashleigh gets her ingredients from local farmers’ markets and makes sure that all unused food is donated locally.

Some of Ashleigh’s personal favorites include the turkey apple sweet potato stir-fry for breakfast, black and blue steak salad for lunch, or salmon stuffed potato and shrimp fajitas for dinner. Interested in the most popular item on the menu? Well, it’s the steakhouse wrap for lunch and the turkey spinach meatballs with zucchini noodles for dinner.

My favorite part of The Green Bunny is Ashleigh’s genuine passion for cooking and making people happy. Since a young age, making food has been a time of joy and that positivity has carried over into The Green Bunny message. Ashleigh has been featured at fitness trade shows, and TV cooking shows on WBTV and Fox 46 Charlotte and just started teaching her very own cooking classes. Her first class is called ‘Meal Prep 101’ which is being held on December 9th Thursday 2017.

How do you Sign Up?

With a very simple process, all you need to do is go online, visit the online menu, choose what you like, and then contact info@thegreenbunnyclt.com to send in your order. There is currently no online payment system.

The Green Bunny’s retail window is open Monday, Wednesday, and Fridays from 5-7 pm and Saturdays from 9:30 am-12: 30 pm. Single meals are available during this time with no preorder necessary at Chef’s choice. (TIP: The Green Bunny shares on Instagram what the meal of the day)

The plans for The Green Bunny are to potentially expand locations throughout the Charlotte area and a future staff could be in the works. Open up a possible brunch-only restaurant. The Green Bunny proves meal prepping can taste good, is exciting, and doesn’t have to be the stigma it says it is.
